New Yorker - Prawns
What is the difference between shrimp and prawns? We might not be able to answer that but we can be certain that Will Plilar the executive chef from the New Yorker can turn them into a masterpiece. Here is one tasty way to prepare prawns with an italian twist.
Jumbo Prawns Sauteed in Garlic-Lemon Butter Sauce with French Green Beans
24 Large Prawns peeled and deveined
6 ½ inch thick sliced of sturdy Italian Bread
1 lb. French Green Beans, Blanched until Tender
1 cup olive oil
4 tablespoons butter room temp.
2 lemons, cut in half
4 cloves garlic thinly sliced
1 Tablespoon red pepper flakes or to taste
½ cup chopped Italian Parsley
2 cups dry white wine
Method:
Start your Gas Grill on high, when hot grill the bread slices until well toasted on both sides, drizzle liberally with olive oil, place onto individual plates or a large platter. Meanwhile heat 2 large skillets on medium-high heat, add remaining olive oil, garlic and red pepper flakes, when garlic starts to brown add the prawns to the skillets divided between them, cook on both sides until almost done about 5 minutes, then to the pans add the white wine, lemons juiced, reduce liquid rapidly by half then add the parsley and butter, season with salt and pepper to taste. Top each toasted bread with warmed green beans and then the shrimp, pour sauce over, serve.
New Yorker - Lobster Tail in Drawn Butter
We promise you have never had lobster tail this good before. Don't believe us? Well then you'll just have to try it yourself. Here is how
Broiled Australian Lobster Tail with Drawn Butter, Roasted Asparagus and Tattooed Potatoes.
2 12-ounce Australian Lobster Tails
1 lb. Red Potatoes cut in half
1 lb. large Asparagus, trimmed
E.V. Olive Oil for coating
2 ounces fresh Rosemary Sprigs
Melted Butter and Lemon Wedges
Method:
Preheat Oven to 375 degrees. In separate bowls add the potatoes and asparagus, coat liberally with olive oil, season with salt and pepper, on a cookie sheet lay small sprigs of rosemary directly onto the pan, top each sprig with a potato cut side down, continue working until all the potatoes are layed out then place in hot oven. Split the tops of the lobster tails, pull the lobster meat out onto the top of the shell leaving the meat attached near the end of the tail, season with salt and pepper, brush with butter, place into the hot oven the tails should take about 20 minutes to cook. In the meantime lay the asparagus spears onto a cookie sheet when the Lobsters are half way finished add the asparagus to the oven so all three things are finished at the same time. Plate the items, garnish with Butter and Lemons. Serve.
New Yorker - Chocolate Souffle
When it is a little chilly outside no treat will be as rich and enjoyable as this Chocolate Souffle. Forget all the wives-tales of how difficult a souffle can be and give this recipe a try.
Chocolate-Espresso Soufflé (Serves 6)
Ingredients:
8 ounces bittersweet chocolate
6 tablespoons butter
2 tablespoons espresso
6 egg yolks
6 large egg whites
½ cup sugar
¼ teaspoon cream of tartar
6 10-ounce soufflé ramekins, buttered and sugared
Method:
Place the chocolate, butter, and espresso in a bowl over simmering water. Stir until smooth. Remove from heat and allow 10 minutes to cool. Then whisk in the egg yolks. Set aside.
Beat the egg whites until soft peaks form. Then add the sugar and the cream of tartar. Beat until stiff. Fold the egg whites into the chocolate mixture. Divide the mixture between the 6 ramekins. Bake at 375-degrees for 15 minutes. Serve with a scoop of coffee ice cream.
New Yorker - Fried Chicken
This fried chicken recipe is one that even the Colonel himself would be envious of. This makes a perfect spring picnic meal so watch the segment and give it a try.
Fried Chicken:
For the Buttermilk Batter:
Mix together 2 eggs with 2 cups Buttermilk, pour over the Chicken Pieces, allow to marinate for 20 minutes or more.
For the Seasoned Flour: mix together
2 cups flour
2.5 teaspoons fresh Ground Black Pepper
1.5 teaspoons White Pepper
2.5 teaspoons Salt
1.5 teaspoons seasoned Salt
To Cook Chicken; in a deep fryer, warm peanut oil to 325 degrees, when oil is hot dredge half of the chicken in the seasoned flour drop into the oil fry for 14 minutes, after if is cooked, remove to plate lined with paper towels, repeat with remaining Chicken.
For the Country Gravy:
After the first batch of chicken is finished, make the gravy by adding 3 tablespoons of the hot oil to a small sauce pan, to that add 3 tablespoons of the seasoned flour, stirring to make a paste, add 2 cups half &half continue stirring over medium heat until cooked and thickened about 15 minutes, add 2 tablespoons crispy bacon bits, serve.
New Yorker - Braised Beef Short-ribs
If you like ribs then you'll LOVE this quick and easy recipe for shortribs. The meat cuts might be a little tough to find but all the effort is worth it since this is a dish everyone will enjoy!
Braised Beef Shortribs:
6 Beef Short Ribs
¼ cup Vegetable oil
2 Cups Seasoned Flour
1 Bottle Red Wine
1 Qt. Water
2 Teaspoon Black Pepper
2 Teaspoons Salt
4 Cups Diced Onion
¼ cup Balsamic Vinegar
4 Bay Leaves
Place a large oven-proof Casserole on the stove top on medium heat, add the oil and the Beef Short Ribs that have been dredged in the seasoned Flour, brown well on all sides. Meanwhile while the ribs are browning stir together the rest of the ingredients, then pour over the Ribs then bake tightly covered in 350 degree oven for 3:45 minutes.

Grilled Flat Iron Steak
4 - 8 oz Flat Iron Steaks, seasoned well with salt and pepper, drizzle with olive oil
4 slices Cambazola cheese
1 large sweet onion such as Vidalia or Walla Walla, sliced quarter inch thick
3 T olive oil
Over medium heat in a medium skillet, saut'e the onions with olive oil until lightly browned, set aside. Grill steaks over hot coals or gas grill until desired temperature. Top with sautéed onions and Cambazola cheese. Serve immediately.

New Yorker - Ahi Tuna
If your a fan of seafood, or even if your not, you'll want this recipe in your cooking arsenal. This ahi tuna is a simple and fast meal that, once you try, you'll claim as a favorite. You can prepare the meal with your favorite sweet onion dressing or you can use the recipe that is included here.
Seared Ahi Tuna
Sweet Onion Dressing:
3/4 Cup Sweet Onion
2 Tbs + 2 tsp Soy Sauce
2 Tbs + 2 tsp Rice Vinegar
2 tsp Water
1/2 tsp Gr. Mustard
Dash of Salt and Pepper
1 Tbs Peanut Oil
1 Tbs Seasame Oil
Sweet Onion Dressing Preperation:
Cut onion into quarters and then blend with 2 cups water. Drain water from onion and add the remaining ingredients and mix in blender.
Ahi Tuna:
Sesame Seeds
Black Pepper
Fennel
Coriander
Cumin Seeds
Ahi Tuna
Carrots
Ginger
Cucumber
Seaweed Salad
Radishes
Sweet Onion Dressing
Encrust Tuna with the spices and then sear in a frying pan. Once seared allow to cool and then top with the carrots, ginger, cucmber, seaweed salad and the sweet onion dressing. Serve chilled.
